Easy Teriyaki Sauce + Shrimp Stir Fry

Store-bought teriyaki sauces are full of added sugars and chemical additives. So, of course, I'm not going to buy it if I can help it! But, I do love some sweet and sticky teriyaki sauce, so this is the perfect thing to fit the bill when I'm craving it without all the extra! And, with the substitution of coconut aminos for traditional soy sauce, can be made completely gluten-free! 

HOMEMADE TERIYAKI SAUCE

Makes approximately 4 servings

  1. Combine the water, brown sugar, honey, soy sauce, and garlic into a saucepan over medium heat. With a whisk, keep stirring to prevent the sauce from burning.

  2. Slowly add the cassava flour as you continue to whisk until sauce reaches the desired consistency. Take off the heat and allow to cool. Sauce will continue to thicken after being taken off heat.

Shrimp Stir Fry

Makes approximately 4 servings

  1. In a large pot, boil water per directions for jasmine rice (usually 3:1 ratio). Once water is boiling, add rice and cover. Let steam for 15 minutes.

  2. In a large skillet, add two tablespoons of coconut oil to warm pan, reserving the other half for the shrimp. Add snap peas and broccoli, evenly distributing the oil. Cover with a lid, shaking the pan occasionally to prevent broccoli and peas from sticking. Continue to cook for 10-12 minutes. If you prefer crisper broccoli, take vegetables off heat at 6-8 minutes.

  3. In a large saucepan, over medium heat, add the two tablespoons of coconut oil to warm pan. Add shrimp, making sure that the shrimp do not overlap to cook evenly. Shrimp are cooked when they change from a gray to a pink color, approximately 1-2 minutes on each side. Take off heat and set aside.

  4. Add water chestnuts to broccoli and snap pea pan, mixing in to coat evenly with oil. Allow to cook for 1-2 minutes more.

  5. Add shrimp and teriyaki sauce to vegetables, stirring to evenly coat.

  6. Pour over desired portion of rice.
