During the summer, there’s nothing that we dread more than turning on the oven. But that doesn’t meant that in the summertime we can’t have tasty desserts! This healthy yogurt bark is a quick and easy way to enjoy a summer treat without long cook times or turning on the oven. Another benefit? This delicious snack is easy to customize and full of protein without any added sugar. Plus, if you have young children they can help by adding ingredients and making it their own. Try changing up your yogurt bark combinations by adding chocolate chips, peanut butter or bananas to make the perfect frozen yogurt bar recipe. What You Need to Make Frozen Yogurt Bark

  • Vanilla Greek Yogurt: For that creamy texture

  • Vanilla Extract: To infuse a bit of extra flavor into the dessert.

  • Crushed Walnuts: Nuts add a bit of crunch.

  • Chopped Dried Pineapple: A bit of added sweetness in each bite.

Simple Ingredient Substitutions

  • Use real matcha. By using the Bolthouse Farms, we are able to add protein to the dessert. However, if you prefer traditional matcha, add on tablespoon (or to taste).

  • Add protein powder. Of course, if you want the protein punch, add one scoop of your favorite vanilla protein powder. To keep this recipe sugar-free, use a clean protein powder, such as Orgain Organic Protein Powder.

  • Switch out the fruit. Try using dried berries or sliced fruit instead of pineapple.

  • Add crunch. Need more crunch? Or prefer different nuts? Switch out any combination of crunchy bits that you want to use.

How to Make Matcha Frozen Yogurt Bark

  1. Create your base. In a large bowl, combine the Greek Yogurt and vanilla extract. Stir well.

  2. Add in your crunchy bits. Fold in nuts and dried pineapple.

  3. Add in your matcha. When fully combined, pour matcha in slowly, making sure to stir well. This will give the yogurt a more spreadable consistency.

  4. Spread it out. Line a baking sheet or pan with parchment paper and spread the yogurt mixture over evenly.

  5. Freeze and enjoy. Place in the freezer for one hour or until yogurt has hardened. Enjoy!

Yogurt Bark Variations

  • Vegan Bark. Substitute the greek yogurt for a coconut yogurt of your choice.

  • Cheesecake Bark. Mix in a 1/4 cup of cream cheese and add in sliced strawberries or blueberries and graham cracker crumbs.
