This recipe is an ultimate family favorite. There is hardly a soup recipe my family loves more than this savory, tomato-based dish. We always get excited to hear our mom is making it, and whenever we make a visit to her house in the fall or winter, this soup is at the top of her list to have ready.

A bowl of Italian Spinach Soup is both nutritious and delicious, satisfying comfort cravings, while also remaining a healthy meal choice. This is a relatively flexible recipe, as you can add in and substitute different vegetable choices, but the key to success in this soup is its namesake—the spicy Italian sausage.

This no-drama, easy-to-pull-together recipe is a lifesaver in a pinch. Plus, it’s easy to throw together, with only eight main ingredients. One of the best things about Italian Spinach Soup is that it can be made in advance and actually tastes better the next day. It keeps for several days and gets even more flavorful overnight, as the vegetables have time to soak up the broth and savory flavors.

Italian Spinach Soup can be somewhat comparable to those familiar with Mexican Tortilla Soup—as it contains the beans, tomatoes, and corn ingredients—but what really distinguishes this soup is the spicy Italian sausage. It adds its own unique kick! It also has a great tomato base that is filling, but not heavy, because of the variety of broth, protein, and different types of veggies.

  • Onion

  • Garlic cloves

  • Chicken broth

  • Canned Cannellini or black beans

  • Canned petite diced tomatoes

  • Frozen sweet corn

  • Fresh spinach

  • Spicy Italian Ground Sausage (Johnsonville)

  • Salt, pepper, and Parmesan to taste

Easy Substitutions and Variations

  • Gluten-free. Luckily, this is already gluten-free!

  • Swap out the beans. I prefer using black beans, but feel free to swap out for any type of beans you may already have in the house or for a kind that you normally prefer.

  • Keep the sausage! I really don’t recommend swapping out the spicy Italian ground sausage for any other type of protein. I 100% recommend using the Johnsonville brand, and don’t forget to buy the spicy sausage, not the mild. (Don’t worry, it won’t be so spicy that kids won’t enjoy this soup.) The spicy sausage is one of the most important elements of this recipe and is the key to success! The extra kick adds fun to the soup.

  • Add more vegetables. The more vegetables, the better! My family often adds more beans, corn, spinach, and onion to stretch the soup a bit more and add more vegetables into our bowls.

  • Make enough for the whole family. This recipe is easy to double! If you are looking to meal prep for the week or need to feed a hungry crowd, you can easily double the recipe to last longer.

  • Make it spicier. Top the soup with crushed red pepper flakes to amp up the spice.

  • Add in pasta. To increase the heartiness of the Italian Spinach soup, try adding in fresh tortellini or orzo to the soup when you add in the vegetables and allow to simmer. (Note: This no longer makes it gluten-free!)

How To Make Italian Spinach Soup

Ingredients:

  • 1 diced onion

  • 2-3 chopped garlic cloves

  • 1 can chicken broth (32-ounce)

  • 2 cans of Cannellini or black beans (15 ounce)

  • 2 cans petite diced tomatoes (15 ounce)

  • 1 package of frozen sweet corn (10 ounce)

  • 1 package of triple-washed, fresh spinach (3-4 handfuls to start but amount differs based on preference)

  • 1 pound of Spicy Italian ground pork (Johnsonville)

  • Salt, pepper, and Parmesan to taste

Instructions:

  1. In a large pot, sauté the chopped onion and diced garlic over med-high heat until tender and aromatic.

  2. In a separate saucepan, brown the Italian ground sausage over medium heat. Don’t cook the sausage completely through. Add the meat after it is browned to the sautéed onion and garlic in the pot.

  3. Add the chicken broth to the pot, cover with a lid, and let simmer gently for 20 minutes.

  4. Add the canned tomatoes, frozen corn, and canned beans, mixing completely. Cover with a lid and let simmer for 3-4 minutes.

  5. Add the spinach. It is better to wait until the final step to stir in the fresh spinach, rather than to allow the spinach to simmer with the other vegetables, since the spinach retains its color better that way. The spinach will shrivel up more than necessary if you add it earlier than this step!

  6. Add salt and pepper to taste.

  7. Add Parmesan cheese when serving! (Optional) Enjoy!
