Strawberry Vanilla Almond Overnight Oats

I'm addicted to dehydrated fruit. It's a thing. I accept it. But in this case, it's so easy to add in freeze-dried strawberries for a subtle pop of sweetness. And, as always, my favorite thing about overnight oats is that they are so easy. I use this overnight recipe as a chance to get a little bit of extra protein in by adding the Vital Proteins collagen peptides. It has no flavor, so you won't even know it's there! 

Strawberry Vanilla Almond Overnight Oats

  1. In a medium mason jar, combine dry ingredients: old-fashioned oats, freeze-dried strawberries, sliced almonds, collagen peptides, chia seeds, ground flax seed, brown sugar, and pink Himalayan salt. Shake well.

  2. Pour the almond milk and vanilla extract over the mixed dry ingredients and shake well. NOTE: Make sure that the almond milk fully covers the oat mixture to ensure full absorption overnight.

  3. Dash cinnamon on top of mixture.

  4. Leave in fridge overnight.

NOTE: I always like to add additional fresh sliced strawberries in the morning, as well as any additional toppings, such as my homemade granola or dried coconut
